It’s the perfect balance of salty, savory, and sweet; combining vine ripened tomatoes and immune boosting garlic and onion. Make it for lunch or serve it for dinner, either way you’ll be satisfied!
Creamy Tomato Soup
5 Minute Prep 2 Minute Blend Serves 4
What You’ll Need:
High Powered Blender*
6 medium vine ripened tomatoes
1 small carrot
1/2 green zucchini
1/2 cup cashews
1/4 cup diced red onion
1/8 cup raw apple cider vinegar
1 cup water
2 cloves garlic
1 jalapeno – deseeded (optional)
2 tbsp. maple syrup
1 tbsp. better than bouillon vegetable base
1 tsp. cayenne pepper (optional)
1 tsp. salt
1/2 tsp. black pepper
Wash produce thoroughly. Place all ingredients into a high-powered blender. Blend for 1-2 minutes. Top with chopped parsley, kale, or cilantro.

*If using a more traditional blender, soak the cashews 2-4 hours prior to blending and chop vegetables into smaller pieces.
